KOJI AGING
Koji serves as a crucial component in the Agu-Bros flavor profile. With a commitment to avoiding artificial additives, both white and black koji hold significant roles on our menu. These varieties are used as flavor enhancers and in the dry aging process of our distinctive koji dry aged pork.
CHARCOAL・WOOD・SMOKE
Our grilled meats and fish are cooked using Japanese bincho tan charcoal and oak sourced from Kita Kyushu. The delicious flavor infused by this combination of charcoal and wood truly enhances the overall taste of our food.
Our smoking program is the heart of our menu, bringing warmth and depth to meats, seafood, and veg for the Agu-Bros signature flavour. We use a blend of woods and employ eco-conscious and natural techniques to avoid any synthetic additives.
